peeled and deveined

tequila

heavy cream

seeded and chopped

Chopped for garnish

ground pepper
to taste
Instructions
Heat the butter and olive oil in a large skillet over high heat.

1 tbsp Extra Virgin olive oil
Saute the shallots until tender but not brown, about 5 minutes.

Add the shrimp and saute for 1 minute.
1 1/2 lbs large shrimp
Add the tequila and cook for 30 seconds.
3 tbsp tequila
Add the cream, tomato, salt, and pepper and saute until the sauce thickens slightly and the shrimp are firm and opaque, 3 to 5 minutes.
1/2 cup heavy cream,

ground pepper
Serve garnished with chopped chives.
