Place the bacon in the skillet and then turn the heat to high. The bacon will fry as the fat is rendered. When the bacon is lovely and crispy remove from the pan and keep warm.

Heat the butter in a skillet over a moderate heat and sauté the bell pepper, scallions, and mushrooms until tender but not brown, about 5 minutes.

Transfer the egg mixture to the bottom halves of the bread, add the bacon, and top with the remaining bread.
