quartered, 450 ml, chestnut

shallot
finely chopped
Salt
to taste
ground pepper
to taste
Instructions
Heat the butter and oil in a skillet over high heat.
Saute the mushrooms, tossing frequently, until they are lightly browned and the liquid is absorbed by the mushrooms and then reappears in the skillet.
Add the shallot, salt, and pepper and saute for 30 seconds.
Notes
I use chestnut mushrooms for their firmness and they carry flavour more than others.
