In a hot frying pan ad enough oil to assist with cooking. I use about 1 - 2 tbsp of olive oil.
Cook the mince with the chopped onion, finely diced shallot and the sprig of thyme.
Cook for 5 minutes, until meat is browned and the onion and shallot are soft.
Remove to pan from heat and add the curry powder. Add salt and pepper to taste.
Lay a sheet of shop brought filo pastry on a clean work surface. Slice the sheet into thirds lengthways so triangles can be formed.
Add a good spoonful of the mixture at the top of each strip and fold diagonally to form a triangle. Then fold the other way and so on. Repeat until all of the mixture is used.
Using a deep frying pan add sufficient oil to deep fry and heat over a high temperature..
When hot, add the samosas carefully and fry until golden brown. turning them every so often gives a balance colour.
