Instructions
Add the soft butter and sugar into a mixing bowl.
125 g unsalted butter,
55 g caster sugar
Beat them together to create a smooth mixture.
Add the flour gradually to create a smooth paste.
180 g plain flour
When mixed, remove from the bowl and place on any cool clean surface.
Use a rolling pin the reduce the thickness to 1/2 inch. Try to make it as rectangle/square as possible.
Cut the mixture into fingers and place onto a baking tray.
Use a fork to puncture the surface of the shortbread mixture.
Sprinkle the extra caster sugar and place in the fridge for 20 - 30 minutes.
Preheat your oven to 190C/375F/Gas Mark 5.
Remove from the fridge and bake for 15 - 20 minutes until a pale golden brown.
Remove from the baking tray to stop them baking and place on a wire tray/rack to cool.
Enjoy.
