Instructions
Remove the mint leaves from the stem and drop into a large serving jug. It must be able to hold about 1.25 litres.

Add the granulated sugar to the jug and pour in the lime juice.
3 tbsp caster sugar,
150 ml lime juice
Using a long wooden spoon, bash the mint leaves and stir to dissolve the sugar in the lime juice.
Add the ice.
15 - 18 regular ice cubes
Add the soda water and gently stir to make sure everything is mixed.
1 l soda water
Now for the good part, taste it. If it needs to be sweeter, add a little more sugar and retest.
Use the lime wedges to serve with the glasses or added to the jug.
