Roasted Beef Canapes

These roasted beef canapes are an elegant and flavourful appetiser, perfect for any occasion. Featuring tender roast beef, zesty horseradish chives, and sweet roasted cherry tomatoes on crispy crostini, they are sure to delight your guests.

Ingredients

24 slices roast beef See Note
12 medium cherry tomatoes halved
1 large baguette sliced into 24 pieces
2 tbsp olive oil
2 tbsp prepared horseradish
2 tbsp fresh chives chopped
salt to taste
pepper to taste

Instructions

Set your oven to 200°C (180°C fan) 400°F or Gas Mark 6.
Place the baguette slices on a baking tray.

Brush both sides with olive oil and season with a little salt.

Bake for 10 minutes or until golden and crisp. Set aside to cool.
Place the cherry tomato halves on a separate baking tray, cut side up.
12 medium cherry tomatoes
Drizzle lightly with olive oil, and season with salt and pepper.
Roast in the oven for about 10-12 minutes, until softened and slightly caramelised. Allow to cool slightly.
In a small bowl, mix the prepared horseradish with the chopped chives.

Adjust seasoning with salt and pepper if needed.

Spread a small amount of the horseradish chive mixture on each crostini.
Top with a slice of roast beef, folding it neatly if necessary.
Place a roasted cherry tomato half on top of each.
If desired, garnish with a small sprig of fresh chives for an elegant finish.
Serve immediately, or keep at room temperature until ready to serve.
