salmon fillets

Instructions
Preheat your oven to 475F/245C/Gas Mark 9
Place a roasting tray large enough to hold the salmon fillets and place it on the hob over a medium high heat. Add the butter and half of the dill.

1 bunch dill
When the butter has melted and the dill has released it lovely perfume, place the salmon fillets skin side down into the tray and put in the oven.
500 g salmon fillets
Roast the salmon for 4 – 5 minutes.
Remove the tray, flip the salmon fillets over and season with salt and pepper.

Return to the oven and cook for a further 4- 5 minutes until the salmon is cooked to your liking.
Remove from the oven and baste with the butter and juices in the pan.
Serve immediately with the other half of the dill and lemon wedges.
