Salami Pizza

A crisp rectangular pizza base topped with fresh on-the-vine tomatoes, slices of salami, and gooey mozzarella cheese. Each salami pizza is perfectly sized for one and ideal for a quick, satisfying meal.

Ingredients

The base:

4 medium tomatoes ripe on-the-vine sliced
50 g salami sliced
50 g mozzarella cheese grated or torn into small pieces
1 tsp olive oil
Freshly ground black pepper to taste
fresh basil for garnish

Instructions

In a small bowl, combine the flour, yeast and salt.
100 g strong white bread flour, ½ tsp instant yeast, ½ tsp salt
Gradually add warm water and olive oil, mixing until a soft dough forms.
65 ml warm water, 1 tsp olive oil
Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean cloth, and leave to rise for 30–45 minutes or until doubled in size.
Preheat your oven to 220°C (200°C fan) / 425°F / Gas Mark 7.
Punch down the risen dough and roll it into a small rectangle, roughly 15x20cm.
Place the base on a baking tray lined with parchment paper.
Drizzle the base lightly with olive oil.

Arrange the sliced tomatoes evenly over the base.

Scatter the salami slices on top of the tomatoes.

Sprinkle the mozzarella over the pizza.

Season with freshly ground black pepper.

Place the pizza in the oven and bake for 12–15 minutes, or until the crust is golden, the cheese is melted, and the salami edges are slightly crisp.
Remove from the oven and garnish with fresh basil leaves if desired.
