In a large mixing bowl, combine the flour, yeast, salt, and sugar. Gradually add the warm water and mix until a dough forms.
500 g all-purpose flour, 7 g active dry yeast, 1 tsp salt, 1 tbsp sugar, 350 ml warm water
Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a long rope, about 50cm (20 inches) long, and shape it into a pretzel.
In a large pot, bring water to a boil and add the baking soda. Carefully place each pretzel into the boiling water for 30 seconds, then remove and place it onto the prepared baking sheet.

Sprinkle the pretzels with coarse salt and bake in the preheated oven for 10-12 minutes or until golden brown.
