Place the new potatoes in a pot of salted water. Bring to a boil and cook for 15–20 minutes, or until tender but not falling apart. Drain and let them cool slightly.
500 g new potatoes
While the potatoes cook, slice the red onion thinly. If you prefer a milder taste, soak the slices in cold water or a splash of vinegar for 5–10 minutes, then drain.

In a small bowl, whisk together the olive oil, white wine vinegar or lemon juice, Dijon mustard, salt, and pepper.

In a large bowl, combine the warm (not hot) potatoes with the red onion, olives, and fresh herbs.
