Stir everything together well until the chicken is fully coated. Cover the bowl and leave it to marinate in the fridge for 30 minutes. If time is short, even 10 minutes will still add flavour.
Heat the vegetable oil in a large frying pan or wok over medium to high heat.
1 tbsp vegetable oil
Add the sliced onion and mushrooms to the pan. Cook for 4 to 5 minutes until the mushrooms soften and the onion turns slightly golden.
200 g chestnut mushrooms, 1 small onion
Stir in the sliced red bell pepper and sweetcorn. Cook for another 3 minutes while stirring often.
150 g sweetcorn, 1 medium red bell pepper
Add the marinated chicken to the pan. Cook for 8 to 10 minutes until the chicken is fully cooked and lightly coloured around the edges.
While the chicken cooks, prepare the sauce. In a small bowl, mix the soy sauce, sesame oil, ground ginger, honey and chicken stock together.
