150gsmoked salmon
1medium avocadoripe thinly sliced
2handfuls baby spinachfresh
2tbspmayonnaise
½tspfreshly ground black pepper
1tsplemon juice
salt to taste

Instructions
Begin by toasting the slices of wholemeal bread until golden and crisp.

In a small bowl, mix the mayonnaise with freshly ground black pepper and lemon juice. Set aside.
2 tbsp mayonnaise, ½ tsp freshly ground black pepper, 1 tsp lemon juice
Lay the toasted wholemeal bread on plates.
Place a handful of baby spinach on each slice of toast.
