Preheat the oven to 200°C (180°C fan) or gas mark 6. Line a baking tray with parchment paper.
In a medium saucepan, bring the water and butter to a boil. Once the butter has melted, remove from the heat and stir in the flour and salt until a smooth dough forms. Return the pan to a low heat and cook for 1–2 minutes, stirring continuously until the dough pulls away from the sides of the pan and forms a ball.
120 ml water, 60 g unsalted butter, 75 g plain flour, 1 pinch salt
Transfer the dough to a bowl and allow it to cool for a few minutes. Beat in the eggs, one at a time, until the mixture is smooth and glossy.

Spoon the dough into a piping bag fitted with a large round nozzle. Pipe 12 lines (about 10cm long) onto the prepared baking tray, leaving space between each one.
Bake the éclairs in the preheated oven for 20–25 minutes or until they are puffed up and golden brown. Turn off the oven, and leave the éclairs inside for 10 minutes to dry out before transferring them to a wire rack to cool completely.
While the éclairs cool, whip the double cream to soft peaks. Gently fold in the sliced strawberries.
300 ml double cream
Once cooled, slice the éclairs in half horizontally. Spoon or pipe the whipped cream into the bottom half of each éclair, then add the sliced strawberries on top.
200 g strawberries
Replace the top half of each éclair. Dust with icing sugar and if desired, drizzle with a strawberry glaze or jam for added sweetness.
