Pour the sweet and sour sauce and the bell peppers into the wok used to cook the pork or chicken and leave to simmer for 1-2 minutes, or until the sauce has reduced to a thick consistency.
1/2 medium green bell pepper, 1/2 medium red bell pepper
Season to taste, with light soy sauce, rice wine and ground white pepper.
To serve, pour the sauce over the pork or chicken and serve with rice and choi sum.
