Ingredients

400 g potato mixed peeled potato, swede and parsnips
1 spray low cal cooking oil
2 large chicken breasts
½ medium red pepper
½ medium yellow pepper
½ medium green pepper
½ medium onion finely chopped
200 ml vegetable stock low-salt
60 ml passata
2 tbsp tomato puree
1 clove garlic crushed
1 tsp smoked paprika sweet
½ tsp ground cinnamon
1 tsp Worcestershire sauce
1 tbsp mango chutney
100 g sugar snap peas mangetout
3 tbsp semi-skimmed milk

Instructions

Bring a pan of water to the boil, cut the potatoes, swede and parsnips into 2cm chunks and simmer for 15–20mins until tender.

Meanwhile, lightly spray a frying pan with the 1 cal spray and put on a high heat. Add the chicken, peppers and onion and stir fry for 5 mins.

Stir together the remaining ingredients except the sugar snap peas and milk. Add to the frying pan, bring to the boil and simmer for 10 mins.
200 ml vegetable stock, 60 ml passata, 2 tbsp tomato puree, 1 clove garlic, 1 tsp smoked paprika, ½ tsp ground cinnamon, 1 tsp Worcestershire sauce, 1 tbsp mango chutney
Add the sugar snap peas. Cook for a further 5 mins.

Drain the potatoes. Mash until smooth, stir in the milk, divide between plates and serve with the chicken.
