Ingredients
For the Beef & Marinade:
250glean beef steaksirloin or rump sliced thinly across the grain
In a bowl, combine sliced beef with soy sauce, brown sugar, grated garlic, chilli flakes (if using) and sesame oil.
250 g lean beef steak, 2 tbsp soy sauce, 1 tsp brown sugar, 1 clove garlic, ½ tsp chilli flakes, 1 tsp sesame oil
Toss well and let it marinate for at least 30 minutes while you prepare the vegetables and sauce.
In a small bowl, mix together soy sauce, oyster sauce, sesame oil, sugar and water. Set aside.
1½ tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, ½ tsp sugar, 2 tbsp water
Heat the oil in a large wok or frying pan over high heat.

Add the marinated beef and stir fry for 2-3 minutes until just browned. Remove and set aside.
In the same pan, add a little more oil if needed, then toss in the chopped garlic and sliced bell pepper. Stir fry for 2 minutes.

Add the mange tout and spring onions, cook for another minute.

Return the beef to the pan, pour over the sauce, and toss everything together for 1-2 minutes until heated through. If you prefer a thicker sauce, add the cornflour mixture now and stir for another minute.

Sprinkle with toasted sesame seeds and garnish with fresh coriander or Thai basil if desired. Serve immediately with steamed jasmine rice or noodles.
