Prick the potatoes all over, and microwave for 8-10 minutes, or until they're soft all the way through. Transfer them to a baking tray and cook in the oven for 15-20 minutes, to crisp up the skin.
4 large baking potatoes
Or, if you have more time, cook the raw potatoes on the middle shelf of your oven for 1½-2 hours, or until the skin is really crisp.
When the potatoes are nearly ready, mix the tuna and sweetcorn together with the fat-free natural yogurt and the mayonnaise. Taste and season with salt and pepper if needed.
400 g tuna, 396 g sweetcorn kernels, 4 tbsp natural yogurt, 4 tbsp mayonnaise, salt, pepper
Cover and chill until required.
Take the jackets out of the oven and cut in half. Fill with the tuna sweetcorn mixture and serve.
