In a bowl add the lettuce, scallions, plum tomatoes and gherkins and mix well.
1/2 head lettuce, 10 large plum tomatoes, 2 large scallions, 6 mini gherkins
When the chilli is nearly ready, turn on the grill to high.
Using a large serving dish, arrange the tortilla chips around the edges and add the hot chilli into the middle.

Sprinkle the grated cheese over the top of the chilli and the crisps. When the grill ins up to temperature place the dish under for about 4 - 5 minutes or until the cheese has melted.

Remove from the oven and add the salad and cool sauce an serve hot.
