Place a saucepan over a medium heat and add the butter.
100 g unsalted butter
Once melted add the porridge oats, flour, caster sugar and pinch of salt and mix thoroughly.
100 g porridge oats, 75 g caster sugar, 100 g self-raising flour, 1 pinch salt
Preheat the oven to 375F/180C/Gas 5.
Lightly grease a baking tray(s).
Scoop out a ½ tablespoon quantities of the mixture using your hands, shape them into ball. Place them onto the baking tray(s) making sure they all fit and have space.
Using your fingers or a floured rolling pin gently flatten the balls into biscuit shapes. Alternatively, you could roll the mixture onto a floured work surface and use pastry cutters.
When the oven has reached temperature, place the tray on the middle shelf and bake for 15 – 18 minutes.
Remove from the oven and allow to cool naturally. They will become crispier as they cool.
