Place a saucepan over a medium heat and add the olive oil. Once hot, add the garlic and fry until soft but not brown.

Add the minced ginger, dark soy sauce, runny honey and 1 tsp of pepper and stir well to combine.
60 ml dark soy sauce, 235 ml honey, 1 inch ginger, salt, pepper
Adjust the temperature until it reaches a light simmer for about 5 minutes. Warning you should keep an eye on the pan as the honey can froth up easily.
Remove from the heat and put to one side for now.
This can be used to spoon over or as a dip for recipes such as fried chicken and spring rolls.
