These gorgeous beef nibbles are a permanent item in my house regardless of the time of year or the weather. Making them on a Bbq or on the stove is the same time and both have amazing flavours.
1/2bunchcilantrocoriander/chop as garnish (optional)
Instructions
Pour tap water into a large bowl and submerse the wooden skewers. This will prevent them from burning/scorching and possible adding an unpleasant taste to the beef.
Chop the beef into bitesize pieces and put to one side for now.
500 g beef
In a large glass/plastic mixing bowl add the onion, ginger, garlic, chilli, lime zest, soy sauce and sugar and stir to combine.
½ large red onion, 1 large red chilli, 2 cloves garlic, 1 inch ginger, 2 tbsp dark soy sauce, 1 large lime, 2 tbsp brown sugar
Add the bitesize pieces of beef to the mixing bowl and stir again to combine. Make sure all of the beef is coated in the marinade. Cover with plastic wrap/clingfilm and pop into the fridge for at least an hour but ideally 12 hours.
Once marinated, place the beef on the skewers with white onion, bell peppers and chillies.

Turn on the barbecue to a medium heat and lightly oil the grill. If your using the stove then place a frying pan/griddle over a high heat but add no oil as you don't want to fry it.
Place the skewers onto the grill and cook for about 3 minutes each side and then turning over. Use the left over marinade to baste the beef keeping it totally moist.
When the beef is charred on all sides and the onion and peppers etc are cooked remove from the heat and add a little drizzle of honey and a sprinkling of sesame seeds.
2 tbsp runny honey, 100 g sesame seeds
Serve with chopped coriander and lime wedges as part of a main dish.
