Instructions
Preheat your oven to 375°F (190°C).
Slice the avocados in half and remove the pits. If needed, you can scoop out a bit of the flesh to create a larger well for the egg.
2 large ripe avocados
Place the avocado halves cut-side up on a baking dish or sheet lined with parchment paper or aluminium foil to prevent sticking.
Crack one egg into each avocado half. Try to keep the yolk intact within the well of the avocado.
4 large eggs
Season the eggs with salt and pepper to taste.

Place the baking dish in the oven and bake for about 15-20 minutes, or until the eggs are cooked to your desired level of doneness. The whites should be set, and the yolks can be runny or cooked through, depending on your preference.
Once baked, remove the avocado halves from the oven and let them cool for a few minutes before serving.
Sprinkle chopped herbs, grated cheese, or hot sauce on top for added flavour.
