Apple fritters are a heavenly blend of crisp, golden dough enveloping tender, cinnamon-spiced apples, creating a mouth-watering treat that's both comforting and utterly irresistible.
In another bowl, beat the eggs. Then add milk and vanilla extract to the beaten eggs and mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; it's okay if the batter is a bit lumpy.
Gently fold in the chopped apples until they are evenly distributed throughout the batter.

Heat oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).

Remove the fritters from the oil using a slotted spoon and drain them on a paper towel-lined plate to remove excess oil.
In a small bowl, whisk together the powdered sugar, milk or water, and vanilla extract until smooth to make the glaze.
While the fritters are still warm, dip each one into the glaze, coating it evenly. Place the glazed fritters on a wire rack to allow any excess glaze to drip off.
