Instructions
Bring a large pot of salted water to a boil.
Add the fusilli pasta and cook according to the package instructions until it is al dente.

Once cooked, drain the pasta and set it aside.
In a medium saucepan, melt the butter over medium heat.

Once melted, whisk in the all-purpose flour to create a roux. Cook for about a minute until the roux turns a light golden brown.

Gradually add the milk to the roux, whisking constantly to prevent lumps from forming.

Continue to cook and stir until the sauce thickens, then reduce the heat to low.
Gradually add the shredded cheese to the sauce, stirring until it is melted and smooth.

If desired, add the optional heavy cream for extra creaminess.

Once the cheese sauce is ready, pour it over the cooked fusilli pasta in the pot.
Stir gently to coat each piece of pasta evenly with the sauce.
