floury potatoes
do not peel
olive oil
to coat the chips
sea salt
to season
ground black pepper

Instructions
Preheat your oven to 250F/ 480/Gas mark 9.
Wash the potatoes gently removing any dirt and blemishes.
Cut the potatoes into wedges. (Adjust the size according to how you like them.)
Place a large pan of water over a high heat and bring to a boil.
Add the potatoes carefully and blanch them for about 3 – 4 minutes.
Drain them well.
Pour the potatoes onto a large roasting tray and drizzle with the hazelnut oil making sure all sides are coated.
Season well with the salt and pepper.
Place the tray into the now heated oven and bake for 20 minutes turning the chunky chips over frequently. I normally do it at least twice.
When the chips have turned golden brown on all sides and are crispy remove from the oven and serve.
