In a bowl, combine the minced mackerel, mashed tofu, egg, minced garlic, minced shallots, salt, white pepper, sugar and cornstarch. Mix thoroughly until well combined.
200 g mackerel fillet, 200 g firm tofu, 1 large egg, 2 cloves garlic, 2 large shallots, 1 tsp salt, 1/2 tsp white pepper, 1 tsp sugar, 1 tbsp cornstarch
Take a wonton wrapper and place a spoonful of the fish mixture in the center. Fold the wrapper to enclose the filling, pressing the edges to seal.

Heat vegetable oil in a deep frying pan over medium heat. Fry the dumplings until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.

In a blender or food processor, combine the roasted peanuts, garlic, red chilies, tamarind paste and palm sugar. Blend until smooth.

Transfer the mixture to a saucepan, add water, and cook over medium heat, stirring frequently, until the sauce thickens, about 10 minutes.
Stir in the sweet soy sauce and salt to taste. Adjust the consistency with more water if needed.

Cut the fried dumplings into bite-sized pieces.
Arrange on a serving plate and drizzle generously with the peanut sauce.
Serve with lime wedges, additional sweet soy sauce, chili sauce, pickled vegetables, and a sprinkle of fried shallots.
