Ingredients

chicken breasts
boneless and skinless

cup
tomatoes
stewed

oz
condensed cream of mushroom soup
can

oz
condensed Cheddar cheese soup
can
1
large
jalapeño
seeded and chopped
1
large
onion
peeled and chopped
2
cups
tortilla chips
2
cups
cheddar cheese
grated
Instructions
Preheat oven to 350°F. Lightly spray a 13x9x2-inch baking dish with vegetable cooking spray; set aside.
Poach chicken in water to cover in a deep saucepan; cook until chicken is no longer pink, drain, cool and dice.
Combine chicken in prepared baking dish with tomatoes, cream of mushroom soup, cheddar cheese soup, jalapeno, and onion.
Layer tortilla chips on top and sprinkle with cheddar cheese.
Bake for 25-30 minutes.
Notes
A casserole that includes chicken and cheese. It may sound weird but damn it works really well.
