Instructions
Wash the potatoes thoroughly and leave the skins on for extra flavour and texture. Cut them into thick wedge shapes and place them in a bowl of cold water for 10 minutes to remove excess starch.

Bring a pot of salted water to a boil. Parboil the potato wedges for 5–7 minutes, until slightly tender but not fully cooked. Drain and let them air dry for a few minutes.
Toss the wedges in a light dusting of cornflour (if using), along with salt and pepper, to create a crispier texture.

Heat the vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the wedges in small batches for 4–5 minutes, or until golden and crispy. Transfer them to a paper towel-lined plate to drain excess oil.

Arrange the hot wedges on a heatproof dish or tray. Sprinkle grated cheese generously over the top and place under a grill for 2–3 minutes, or until the cheese is melted and bubbly.

Alternatively add the cheese to a small pan over a low medium heat and gentle melt. Once melted, drizzle over the potato wedges.
