In a bowl, mix soy sauce, honey, smoked paprika, garlic powder, salt and pepper. Add the pork belly pieces and toss to coat. Let marinate for at least 15 minutes.
Heat a frying pan or skillet over medium heat with a little olive oil. Add the marinated pork belly and cook for 8–10 minutes, turning occasionally, until caramelised and tender. Remove from heat and set aside.

Slice the French stick lengthwise, along the top or on the side leaving a hinge so it opens like a book. Spread mayonnaise or your favourite sauce on the inside.

Assemble with cheese:
Sprinkle the shredded cheese evenly inside the French stick. Place the cooked pork belly on top of the cheese.

Melt the cheese:
Place the filled French stick under a preheated grill (broiler) for 3–5 minutes, or until the cheese is melted and bubbly.
Finish and serve:
