rye bread
crusts trimmed

butter
20 ml, room temp

sardines
drained, 110 g

green olives
sliced, See Note

onion
paper-thin

lemon
paper-thin

sprigs
dill
or parsley
Instructions
Spread the bread with butter, being careful to cover the bread completely.
Divide the sardines and olives between the pieces of bread and top each with a slice of onion.
Garnish with a slice of lemon and a sprig of fresh herb.
Notes
Note:
It is best to use pimiento stuffed green olives for the flavour to compliment the herring. Just give them a slice
