Rinse the sea bream under cold water and pat dry with kitchen paper. Make three shallow slashes on both sides of each fish.

Rub the fish all over with olive oil, including inside the cavity. Season generously with sea salt and black pepper, making sure to get the seasoning into the slashes.

Place a few lemon slices, a sprig of thyme, and a smashed garlic clove inside the cavity of each fish.
