Add the finely chopped onion, garlic and fresh chilli. Add the smoked paprika, Dijon mustard, Worcestershire sauce, black pepper and salt.

Gently mix everything together with your hands until the ingredients are evenly distributed. Do not overwork the mince, as this can make the burgers dense.
Divide the mixture into four equal portions. Shape each portion into a burger patty roughly 2cm thick.
Press a shallow indentation into the centre of each patty using your thumb. This helps prevent the burgers from puffing up during cooking.
Place the patties on a plate, cover and refrigerate for around 30 minutes. This helps them firm up and makes them easier to cook.
Remove the patties from the refrigerator while you heat the barbecue or grill. Brush the patties lightly with the olive oil.

For a barbecue, make sure the grill is hot before adding the burgers. Cook for approximately 5–6 minutes on each side, depending on thickness and your preferred level of doneness. For food safety, minced beef should be cooked through to the appropriate safe internal temperature.
If using a grill, place the patties on a suitable grill tray and cook under a hot grill, turning halfway through cooking.
If adding cheese, place a slice over each burger during the final minute of cooking and allow it to melt.

Remove the burgers from the heat and allow them to rest for a couple of minutes.
Lightly toast the burger buns, then build your burgers with lettuce, tomato, onion and your favourite sauces.

Tips for Moist Burger Patties:The key to juicy homemade burgers is not using excessively lean beef and not overworking the mixture. A little natural fat keeps the patties moist as they cook, while gentle handling keeps the texture tender.For an extra smoky barbecue flavour, add another pinch of smoked paprika. If you enjoy serious heat, increase the fresh chilli or add a pinch of dried chilli flakes.Most importantly, don't press down on the burgers while they cook. It may create an attractive sizzle, but it also forces those precious juices out of the meat. Let the heat do the work and turn the patties only when necessary.
