Cut the bread into small cubes. Ideally, use day-old bread as it absorbs the stock without becoming too soggy. If your bread is fresh, spread the cubes on a baking tray and dry in a low oven for approximately 10–15 minutes.
500 g white bread
Melt the butter in a large frying pan over medium heat. Add the chopped onions and celery. Cook for 6–8 minutes until softened.
100 g butter, 2 medium onions, 2 sticks celery
Stir in the garlic, sage, thyme and rosemary. Cook for another minute, allowing the wonderful aromas to develop.
Place the bread cubes in a large mixing bowl. Add the cooked onion mixture, parsley, salt and black pepper. Stir gently until everything is evenly distributed.
2 tbsp fresh parsley, ½ tsp black pepper, 1 tsp salt
Gradually pour in the chicken or turkey stock. Mix gently until the bread is moist but not swimming in liquid.
450 ml chicken stock
Allow the mixture to cool slightly before stirring in the beaten eggs. These help bind the stuffing together during baking.
2 large eggs
Grease your baking dish with a little butter. Spoon the stuffing mixture into the dish and spread it evenly. Avoid pressing it down too firmly.
Cover with aluminium foil and bake in a preheated oven at 180°C (160°C fan / 350°F) for 25 minutes.
Remove the foil and bake for another 15–20 minutes until the surface is beautifully golden brown and slightly crisp.
Allow the stuffing to rest for 5 minutes before serving. Spoon generous portions alongside your roast turkey or other favourite meats.
