Sage

Sage (Salvia officinalis) – One of the most popular of culinary herbs, the fuzzy, grey-green leaves of this perennial Mediterranean native can be used fresh, dried and crumbled, or dried and ground (aka “rubbed”). Although it loses much of its potency when dried, both the dried and fresh should be used sparingly because the powerful musty, minty flavour can be overpowering. Many species of the genus Salvia are used as ornamental plants and the home gardener should be aware that not every plant labelled “sage” is suitable for culinary use.
