Sage is one of the most popular of culinary herbs, especially in my house. The small fuzzy, grey green leaves can be used fresh, dried and crumbled, or dried and ground. Although it loses much of its potency when dried, both the dried and fresh should be used sparingly. This is because the powerful musty, minty flavour can be overpowering.
