In a large bowl, mix the beef mince with the grated onion, egg, salt, pepper, and Worcestershire sauce if using. Gently combine – don’t overwork the mix or the burgers can become tough.
500 g beef mince, 1 small onion, 1 large egg, salt, freshly ground black pepper, 1 tbsp Worcestershire sauce
Divide the mixture into 4 equal portions and shape into round, slightly flattened patties.
Heat your BBQ or frying pan to medium-high.
Cook the burgers for around 4–5 minutes per side, depending on how well done you like them.
Place a slice of cheese on each burger for the last minute of cooking to let it melt.

While the burgers are cooking, lightly toast the sesame seed buns, cut side down on the grill or in a buttered pan until golden.
4 large sesame seed burger buns, 1 knob unsalted butter
On the base of each bun, layer some lamb’s lettuce, followed by a slice of tomato. Add the hot, cheesy burger patty, then top with red onion rings and sliced pickles. Pop on the top half of the bun.
