In a shallow bowl, combine the cooled espresso and Jack Daniels whiskey. Set aside to allow the flavours to meld.
1 cup espresso, 1/3 cup Jack Daniels
In a large bowl, beat the egg yolks and sugar together until pale and creamy. Add the mascarpone and vanilla extract, and whisk until smooth and well combined.

In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the meringue into the mascarpone mixture, being careful not to deflate the mixture.

One at a time, dip each ladyfinger into the coffee-whiskey mixture, ensuring they’re soaked but not soggy. Arrange a single layer of soaked ladyfingers in the base of a each glass/dishes.
20 medium ladyfinger biscuits
Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly. Add another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
Cover the glass/dishes with cling film and refrigerate for 4-6 hours, or ideally overnight, to allow the flavours to meld and the dessert to set.
Just before serving, generously dust the top with unsweetened cocoa powder. Optionally, drizzle a little Jack Daniels over the top for extra flair.
