Ingredients
1medium pizza baseshop or homemade
200gcooked turkeyshredded
½cuppizza sauce or tomato passata
1cupmozzarella cheeseshredded
½cupblack olivessliced and green olives
½mediumred bell pepperthinly sliced
½medium green bell pepperthinly sliced
1medium onionthinly sliced and caramelised
1tspdried oregano
1tspchilli flakesoptional
2tbspolive oil
1pinchsalt
Instructions
Preheat your oven to 220°C (425°F) and place a baking sheet or pizza stone inside to heat.
Place a large skillet over medium heat and add the olive oil or butter. Let it melt and coat the pan. Add the sliced onion to the pan and stir to coat in the oil. Sprinkle with a pinch of salt to help draw out moisture.

Reduce the heat to low or medium-low. Stir occasionally to prevent sticking or burning, allowing the onions to soften and release their sugars. Caramelisation takes time so be patient, its worth it.
Spread the pizza sauce evenly over the base. Sprinkle half the mozzarella cheese on top.

Arrange the shredded turkey, bell peppers, olives and caramelised onions over the cheese.
200 g cooked turkey, ½ cup black olives, ½ medium red bell pepper, ½ medium green bell pepper
Sprinkle the remaining half of the mozzarella and a dash of oregano for flavour. Add the chilli flakes if using.

Carefully transfer the pizza to the preheated baking sheet or stone. Bake for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden.
Remove from the oven, let it cool for a minute, and slice into 8 pieces. Serve warm and enjoy!
