Ingredients
1lbtagliatellepasta
1tbspolive oil
1/4cuplime juice
10oztomatoes with green chilies, undrained
16ozblack beansrinsed and drained
1 1/4lbssirloin steak1" thick boneless
1cupgreen pepperchopped
1cupsweetcornthawed and drained
1/4cupscallionsspring onions/sliced
1/2cupcilantro
2tspgarlicminced
1/2tspground cumin
1tspSalt
Instructions
Cook pasta according to package directions.
1 lb tagliatelle
While pasta is cooking, trim fat from steak and cut lengthwise in half and then crosswise into 1/8" thick strips.
Heat oil in large nonstick skillet over medium-high heat.
1 tbsp olive oil
Add steak, half at a time and cook 1-2 minutes or until outside surface is no longer pink. Remove steak and set aside.
1 1/4 lbs sirloin steak
In same skillet, add lime juice, tomatoes and chilies, black beans, green pepper, corn, onion, cilantro, garlic, cumin, and salt. Cook and stir until hot.
1/4 cup lime juice, 10 oz tomatoes, 16 oz black beans, 1 cup green pepper, 1 cup sweetcorn, 1/4 cup scallions, 1/2 cup cilantro, 2 tsp garlic, 1 tsp Salt, 1/2 tsp ground cumin
Add cooked meat and cook until heated through.
Serve with steak and vegetable mixture over pasta.
