Ingredients

2 tbsp vegetable oil
2 medium onions peeled/finely chop
1/2 tsp turmeric
1/2 tsp cumin
2 tbsp garam masala see below
2 cloves garlic finely chop
1 tbsp ginger finely chop
2 large tomatoes chop
1 lb okra trimmed into 1 inch pieces,
2 large green bell pepper cored, seeded, and chopped
1/4 cup water
salt to taste
cayenne pepper to taste

Instructions

Heat the oil in a large, heavy skillet over moderate heat.

Sauté the onions, stirring frequently, until light golden brown.

Add the garum masala and spices, garlic, ginger, salt, and cayenne pepper.
1/2 tsp turmeric, 2 tbsp garam masala, 2 cloves garlic, 1 tbsp ginger, salt, cayenne pepper, 1/2 tsp cumin
Sauté for another 2 minutes, stirring once or twice.
Add the tomatoes, okra, bell peppers, and water.
2 large tomatoes, 1 lb okra, 2 large green bell pepper, 1/4 cup water
Cover, reduce the heat, and simmer 15 to 20 minutes, until the okra is tender.
