Heat the olive oil in a large pan over medium-high heat.
3 tbsp olive oil
Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove from the pan and set aside.
In the same pan, add the garlic, ginger and red chillies. Sauté for 1-2 minutes until fragrant.

Return the shrimp to the pan and pour in the sauce.
Stir well to coat the shrimp in the spicy glaze. Cook for another 2 minutes until the sauce thickens slightly.
Remove from the heat, sprinkle with fresh coriander, and serve with lime wedges on the side.
