Ingredients
400gspaghettilinguine
2tbspolive oil
3clovesgarlicthinly sliced
120gsardines in olive oil / drained
1medium lemonzest
2tbspcapersoptional
50gblack olivespitted and sliced
1tspdried chilli flakesoptional
50gparsleyfresh finely chopped

ground black pepperto taste
30gbreadcrumbstoasted
Instructions
Bring a large pot of salted water to the boil and cook the pasta according to the packet instructions until al dente.
400 g spaghetti
While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the garlic and sauté until golden and fragrant, about 2 minutes.

Add the sardines, breaking them into smaller pieces with a spoon. Stir in the lemon zest, juice, capers (if using), olives, and chilli flakes. Cook for 3-4 minutes to warm through.
120 g sardines, 1 medium lemon, 2 tbsp capers, 50 g black olives, 1 tsp dried chilli flakes
Drain the pasta, reserving a small cup of pasta water. Toss the pasta into the frying pan with the sardine mixture, adding a splash of the reserved pasta water to loosen the sauce if needed.
Season with salt and pepper, and stir in the fresh parsley. Serve immediately, garnished with toasted breadcrumbs if desired.
