Ingredients
1lbripe tomatoes
½cupmozzarella
1mediumred bell pepper
1medium green bell pepper
16medium black olives
2tbspolive oilgood quality
Balsamic vinegaroptional
saltto taste
ground pepperto taste
Instructions
Cut the tomatoes into chunks, the size being dependant of the variety you are using.
1 lb ripe tomatoes
Cut the mozzarella into small cubes.
½ cup mozzarella
Slice the red and green bell peppers into strips making sure to remove the seeds and core.
1 medium red bell pepper, 1 medium green bell pepper
Arrange the tomatoes, mozzarella and sliced peppers in a serving bowl and drizzle with olive oil.
2 tbsp olive oil
Also drizzle with Balsamic vinegar (if using) and taste.
Balsamic vinegar
Season with salt and pepper if required.

Scatter the olives around the bowl and add a few basil leaves.
