Mozzarella is traditionally a southern Italian cheese made from buffalo milk.   Mozzarella of several kinds is used for most types of pizza and several pasta dishes. Also served with sliced tomatoes and basil in Caprese salad. The cheese is first recorded in 1570. It is ideal for its soft melting state making it ideal in hot dishes. Try it in risottos for added softness.
