Chicken and Mushroom Pizza is a simple recipe that is so popular in my house. It is jammed with flavour and gooey cheese and is brilliant hot or cold. These pizzas are perfect for movie night served with homemade bbq dip and Soy and Sesame Dipping Sauce.

Serve as a main dish, a snack and also for my son as a breakfast/brunch. Which ever meal you serve this, its brilliant both hot and cold. This means perfect for packed lunches, picnics and when in a rush. I am not a fan of buying kitchen equipment I wouldn’t use much but I have invested in a pizza stone. It gives the pizza a stunning crust every time and are cheap compared to pizza ovens for the same effect.

Depending on who is eating, I have added garlic puree (shop brought) and a sliced red chilli for amazing flavours. Chicken and Mushroom Pizza is a perfect way to use leftover proteins such chicken and also turkey. I hate throwing anything away, I have even used leftover Bolognese sauce on the pizza base instead of passata. When I make these pizzas, I am always looking for other ingredients to add to vary them. I added marinated diced artichokes last week and everybody loved it..

  • Place a frying pan over a medium high heat and add a little butter and oil. Once hot, add the mushrooms and fry until they have turned a gorgeous brown and they have lost their moisture. If you put raw mushrooms on a pizza, as they cook they release water which will make the base soggy.
    Olive oil, butter, 100 g chestnut mushroom
  • Once the mushrooms are cooked transfer to a plate and put to one side for now. Add the shallots to the pan and quickly fry and place on the plate with the mushrooms.
    1 large shallot
  • Preheat the oven at 220C/425F/Gas Mark 7
  • Place the pizza base onto a pizza tray and spoon the passata over the base leaving about an inch from the edge.
    400 g passata, 12 inch pizza base
  • Sprinkle the grated cheddar over the pizza.
    50 g cheddar
  • Add the mushrooms, shallot, chicken and sweetcorn evenly over the pizza and then top with the torn mozzarella cheese.
    1 large chicken breast, 200 g sweetcorn, 50 g mozzarella
  • Place in the preheated oven for 8 minutes or until the crust is a lovely golden brown and the cheese is bubbling. Seasoning accordingly.
