Place a frying pan over a medium high heat and add a little butter and oil. Once hot, add the mushrooms and fry until they have turned a gorgeous brown and they have lost their moisture. If you put raw mushrooms on a pizza, as they cook they release water which will make the base soggy.

Once the mushrooms are cooked transfer to a plate and put to one side for now. Add the shallots to the pan and quickly fry and place on the plate with the mushrooms.
1 large shallot
Preheat the oven at 220C/425F/Gas Mark 7
Place the pizza base onto a pizza tray and spoon the passata over the base leaving about an inch from the edge.
400 g passata, 12 inch pizza base
Sprinkle the grated cheddar over the pizza.
50 g cheddar
Add the mushrooms, shallot, chicken and sweetcorn evenly over the pizza and then top with the torn mozzarella cheese.
1 large chicken breast, 200 g sweetcorn, 50 g mozzarella
Place in the preheated oven for 8 minutes or until the crust is a lovely golden brown and the cheese is bubbling. Seasoning accordingly.
