Gouda is popular the world over and reported accounts for between 50 to 60% of the world’s cheese consumption. It is a Dutch semi-hard cheese celebrated for its rich, unique flavour and smooth texture.There are seven different types of Gouda cheese being categorized on age. These include Graskaas are the youngest and ready to eat a few weeks after production. Overjarig on the other hand is usually matured for 24 month onwards. The simple method to remember which the age of a Gouda cheese is by the colour of the wax rind. Young cheese have yellow, orange, or red wax rinds while mature cheeses have black wax rinds.
