A good Beef Biryani fills the kitchen with amazing aromas long before it reaches the table. I love recipes like this because they give me plenty of room to experiment.

Biryani has always seemed like one of those dishes that rewards a little patience. There are layers of flavour in every mouthful, and each ingredient seems to bring something different. I am certainly no expert when it comes to traditional Indian cooking. However, that has never stopped me from having a go and making a few changes along the way.

This Beef Biryani is packed with the traditional flavours you would expect. Tender beef sits amongst fragrant rice, spices, onions and other tasty ingredients. As everything cooks together, the aromas become richer and more tempting. Even better, the kitchen starts to smell like a small restaurant.

I particularly enjoy using beef in biryani. It gives the dish a deeper and heartier character than some of the other versions I have tried. The beef also works beautifully with the aromatic spices. Furthermore, the longer cooking time helps everything develop into one wonderfully rich dish.

One thing I like about making biryani at home is the opportunity to experiment. Sometimes I add a little more spice because I fancy something with extra warmth. On other occasions, I might change the balance slightly depending on what I have in the cupboard. After all, cooking should be enjoyable rather than feeling like a strict science experiment.

For this version, I decided to add tomato sections when serving. The fresh tomato brings a lovely contrast to the rich beef and fragrant rice. It also adds a little colour to what can otherwise be quite a brown-looking dish. Moreover, the juicy tomato gives each mouthful a fresher finish.

Then comes my favourite little addition: cooked garlic cloves. I have always believed that you can rarely have too much garlic. A few whole cloves cooked until soft provide an extra hit of flavour without taking over the whole dish. When you bite into one, you get that lovely sweet and savoury garlic taste.

The combination works surprisingly well. You get the warmth of the spices, the richness of the beef and the fragrant rice. Then the tomato cuts through the richness, while the garlic adds another layer of flavour. It is a simple finishing touch, but it makes the dish feel a little more special.

I also like serving Beef Biryani straight from the cooking pot. There is something about lifting the lid and releasing that cloud of fragrant steam. It makes everyone suddenly interested in what is happening in the kitchen! I usually give the rice a gentle fluff before serving, being careful not to turn everything into one big mixture.

Although this is a filling meal on its own, it can also become part of a larger feast. Some cooling yoghurt or a simple salad would work nicely alongside it. Alternatively, you could add some naan bread if you really want to make dinner feel like an occasion.

For me, the best part of cooking a dish like this is the experimenting. I might not always follow every traditional method perfectly, but I enjoy discovering combinations that work. Sometimes a small change can make a familiar dish feel completely different.

Instructions

  • Begin by preparing the beef. Pat the pieces dry with kitchen paper and season with the salt and black pepper.
    600 g stewing beef, 1 tsp salt, ½ tsp black pepper
  • Heat the vegetable oil in a large heavy-based saucepan or casserole dish over a medium-high heat. Add the beef in batches and brown it on all sides. Do not overcrowd the pan, as the beef needs to brown rather than steam.
    2 tbsp vegetable oil
  • Remove the browned beef and set it aside. Next, add the sliced onion to the same pan and cook for around 5 minutes until it starts to soften and turn golden.

  • Add the minced garlic and grated ginger. Stir everything together and cook for another minute.
    3 cloves garlic, 2 cm fresh ginger
  • Add the chopped tomatoes and tomato purée. Stir well, then add the cumin, coriander, turmeric, garam masala and chilli powder.
    2 large tomatoes, 2 tbsp tomato purée, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp turmeric, 1 tsp garam masala, ½ tsp chilli powder
  • Return the browned beef to the pan and stir until it is coated in the spicy tomato mixture.
  • Pour in the beef stock and bring everything to a gentle simmer. Cover the pan and cook for approximately 45 minutes, or until the beef becomes tender.
    250 ml beef stock
  • Meanwhile, rinse the basmati rice under cold running water until the water runs mostly clear. This removes excess starch and helps produce lighter, fluffier rice.
  • Place the rice in a saucepan with the water, cinnamon stick, cardamom pods, cloves, bay leaf and salt. Bring to the boil, then reduce the heat and cover.
    300 g basmati rice, 600 ml water, 1 stick cinnamon, 4 pods cardamom, 4 whole cloves, 1 leaf bay, ½ tsp salt
  • Cook the rice for around 10 minutes, or until the water has been absorbed and the grains are almost tender. Remove from the heat and leave covered for another 5 minutes.
  • While the rice rests, heat the remaining tablespoon of oil in a small frying pan. Add the garlic cloves and cook gently until they become golden and tender. Turn them regularly so they colour evenly without burning.

  • When the beef is tender, taste the sauce and adjust the seasoning if necessary. The mixture should be rich and fairly thick rather than watery.
  • Add half of the cooked rice over the beef mixture. Sprinkle over a little garam masala, then add the remaining rice.

  • Cover the pan and cook over a very low heat for around 10 minutes. This allows the flavours to mingle while the rice finishes cooking.
  • Carefully fluff the rice with a fork, taking care not to break the grains or turn the biryani into a sticky mixture.
  • Transfer the Beef Biryani to a large serving dish. Arrange the fresh tomato sections around the rice and scatter the cooked garlic cloves over the top.

  • Finish with a sprinkling of fresh coriander and serve immediately.

Notes

Serving Suggestions:
Serve the Beef Biryani with the tomato sections and cooked garlic clearly visible on top. A bowl of natural yoghurt, cucumber raita or a simple green salad makes a refreshing accompaniment. Naan bread or chapatis are also excellent for mopping up any remaining sauce.
