There is something rather lovely about sitting down to a proper breakfast, especially when it is made with fresh ingredients and tastes as good as it looks. Healthy Eggs is one of those simple dishes that proves you do not need a long list of ingredients or hours in the kitchen to enjoy something really satisfying. It brings together soft, creamy scrambled eggs, juicy plum tomatoes, delicate ribbons of smoked salmon and a lovely seeded roll to create a breakfast that feels a little special without being complicated.
For me, scrambled eggs are one of the best ways to start the day. When cooked properly, they should be soft, light and creamy, rather than dry or rubbery. They have a lovely, gentle flavour that works beautifully with the other ingredients on the plate. Better still, eggs provide protein, which helps make this a filling breakfast that can keep you going throughout the morning.
The smoked salmon adds something quite different. Its delicate texture and distinctive smoky flavour complement the eggs wonderfully, while the rich taste gives the whole dish a touch of luxury. You only need a few ribbons of salmon to make a difference, so there is no need to go overboard. I particularly like the way it sits alongside the warm eggs, creating a combination that feels much more indulgent than you might expect from such a straightforward breakfast.
Then there are the plum tomatoes. These little beauties bring colour, freshness and a gentle sweetness to the plate. Their slightly tangy flavour cuts through the richness of the eggs and salmon, helping to keep everything balanced. I like serving them halved, as they look attractive and are easy to eat. They also provide useful nutrients, including vitamin C, making them a welcome addition to a healthy morning meal.
Of course, no breakfast plate is quite complete without something to mop up those lovely scrambled eggs. That is where a seeded roll comes into its own. The seeds add a pleasant crunch, while the bread provides a little extra substance. Choosing a wholemeal or wholegrain seeded roll can also increase the fibre content, which is always a bonus when putting together a balanced breakfast.
To finish everything off, I like to add a light sprinkle of freshly chopped cress or chives. It might seem like a small detail, but fresh herbs can make a surprising difference. Chives bring a mild onion flavour that works particularly well with eggs, whereas cress has a fresh, peppery taste. Both add a lovely splash of green and make the finished plate look inviting.
One of the things I enjoy most about Healthy Eggs is how easily it fits into everyday life. It is quick enough for a relaxed weekday morning, yet attractive enough to serve when you have guests staying over. You can enjoy it with a cup of tea or freshly brewed coffee, perhaps with a glass of water or a little fresh fruit on the side.
Although this breakfast feels indulgent, it can form part of a balanced diet. The eggs and salmon provide protein, the tomatoes contribute vegetables, and a wholegrain seeded roll supplies carbohydrates and fibre. As with any meal, the overall nutritional value will depend on the portions and ingredients you choose.
Healthy Eggs is a lovely reminder that eating well does not have to mean sacrificing flavour. With its creamy eggs, smoky salmon, fresh tomatoes and crunchy seeded bread, every part of the plate brings something different. It is simple home cooking at its best, and a breakfast I would happily look forward to any morning of the week.

- Prepare the ingredients. Wash the plum tomatoes and cut them in half. Chop the chives if using, or trim and prepare the cress. Set the smoked salmon aside and allow it to come to room temperature briefly while you prepare the eggs.
- Prepare the eggs. Crack the eggs into a mixing bowl. Add the milk, if using, and season lightly with black pepper. Beat with a fork until the yolks and whites are combined. Go easy on the salt, as smoked salmon is already quite salty.4 large eggs, 1 tbsp milk, freshly ground black pepper, salt
