Creamy Seafood Pasta

Bringing a big dish of creamy seafood pasta to the table when friends come round for dinner has to be one of my favourite coking moments. It looks inviting, smells wonderful and has all the makings of a meal that everyone can enjoy. I love dishes like this because they feel a little bit special without being overly complicated or requiring hours of preparation in the kitchen.

Creamy Seafood Pasta brings together juicy shrimp, tender broccoli, sliced mushrooms and a mixture of spaghetti and fusilli, all coated in a rich, thick and creamy sauce. A pinch of freshly ground black pepper adds just the right finishing touch. It is a lovely combination of flavours and textures, making every mouthful a little different.

A Lovely Combination of Flavours

One of the things I enjoy most about this dish is how well the ingredients work together. The shrimp provide a delicate seafood flavour, while the mushrooms bring a lovely earthy taste to the creamy sauce. Meanwhile, the broccoli adds colour, freshness and a little bite, which helps balance the richness of the other ingredients.

Using two types of pasta might seem a little unusual, but I think it works beautifully. Spaghetti gives the dish its familiar pasta feel, while fusilli catches little pockets of that delicious creamy sauce in its twists and turns. Consequently, you get plenty of flavour throughout the dish rather than finding all the sauce sitting at the bottom of your bowl.

The sauce is what brings everything together. It should be thick enough to coat the pasta and vegetables properly without making the dish feel too heavy. A little black pepper adds gentle warmth and brings out the flavours of the seafood and mushrooms. I prefer to keep the seasoning simple because the ingredients themselves deserve to shine.

Perfect for Entertaining at Home

When I have friends coming over, I always appreciate meals that look impressive but allow me to spend time with my guests. This is where Creamy Seafood Pasta really comes into its own. It makes a generous, colourful dish that can be served straight from the pan or arranged in a large serving bowl for everyone to help themselves.

There is no need to spend a fortune on complicated ingredients or create something overly fancy. Instead, this dish offers a lovely way to turn everyday pasta into a meal that feels worthy of sharing with friends. You can even prepare some of the vegetables beforehand, leaving less to do when everyone arrives.

I would happily serve this pasta with a simple green salad and some warm, crusty bread. The salad provides a fresh contrast to the creamy sauce, while the bread is perfect for mopping up any sauce left on the plate. A little chopped parsley sprinkled over the top would also add a fresh finish and make the dish look even more appealing.

A Comforting Meal for Any Occasion

Although Creamy Seafood Pasta makes a wonderful dinner party meal, I would not save it just for special occasions. It is equally suited to a relaxed family supper or a cosy evening when you fancy something comforting and satisfying.

What makes this dish so appealing is its combination of simplicity, flavour and variety. The shrimp, broccoli and mushrooms provide plenty of interest, while the two types of pasta make it feel generous and substantial. Best of all, that lovely creamy sauce ties everything together.

For me, good home cooking is about making food that people genuinely enjoy eating. Creamy Seafood Pasta is warming, full of flavour and easy to share, making it a dish I would be more than happy to place at the centre of the table when friends and family come over.

Ingredients

Instructions

  • Wash the broccoli and cut it into small florets. Slice the mushrooms and finely chop the garlic. If necessary, peel and devein the shrimp, then pat them dry with kitchen paper.
  • Bring a large saucepan of salted water to the boil. Add the spaghetti and fusilli, cooking according to their packet instructions until just al dente. Add the broccoli for the final 3–4 minutes of cooking. Drain everything, reserving a mug of pasta water.
    250 g spaghetti, 250 g fusilli pasta, 250 g broccoli
  • Heat the olive oil in a large frying pan over a medium heat. Add the sliced mushrooms and cook for 5–7 minutes until softened and lightly golden. Stir in the garlic and cook for another minute, taking care not to burn it.
2 cloves garlic, 1 tbsp olive oil, 200 g mushrooms
  • Add the shrimp to the pan and cook until they turn pink and opaque. Raw shrimp generally take around 3–5 minutes, depending on their size. Avoid overcooking them, as they can quickly become firm and rubbery.
    400 g shrimp
  • Pour in the stock and double cream, stirring well to combine. Bring the sauce to a gentle simmer and cook for 4–6 minutes until it thickens slightly. Stir in the Parmesan, if using, and season with black pepper and a little salt to taste.
300 ml double cream, 150 ml vegetable stock, 25 g Parmesan cheese, Salt, Freshly ground black pepper
  • Add the drained spaghetti, fusilli and broccoli to the creamy sauce. Toss gently until everything is evenly coated. If the sauce is too thick, add a little reserved pasta water until it reaches your preferred consistency.
  • Transfer the pasta to a large warmed serving bowl or individual plates. Finish with freshly ground black pepper and a scattering of chopped parsley. Serve immediately while the sauce is warm and creamy.
    Fresh parsley

Notes

Tips:
Keep the sauce creamy: Avoid boiling it rapidly, as gentle simmering helps it thicken without reducing too much.
Cook the pasta evenly: Check the packet timings for both pasta shapes and add them separately if their cooking times differ.
Avoid overcooking the shrimp: Add them towards the end of the cooking process so they stay tender.
Make it extra special: A small squeeze of lemon juice just before serving can brighten the creamy sauce.
Prefer a thicker sauce? Add a little extra Parmesan or allow the sauce to simmer gently for another minute or two.
Storage and reheating:
Store leftovers in an airtight container in the refrigerator and eat within 1–2 days. Cool promptly and refrigerate within two hours. Reheat thoroughly until piping hot, adding a splash of milk or cream to loosen the sauce. Avoid reheating more than once.
Cook’s note: If you are using cooked, ready-to-eat shrimp rather than raw shrimp, add them to the sauce towards the end and heat through thoroughly, following the packet instructions.
